Honestly, I really am euphoric that so many of the things my family eats on an everyday basis has been graced with additional nutritional value thanks to Activz powders. One can’t help but pat oneself on the back for making a conscious effort to boost the essential ingredients needed for overall better health. Little motivation is necessary in wanting the very best for our children and establishing healthier choices for them at the dinner table. I sometimes have to remind myself of this when once again, the pants just purchased for my kids 8 weeks ago are 3 inches too short now. This is an alarmingly habitual occurrence around here these days, and my joy is periodically dampened due to wardrobe replacement costs!
Still, our overall nutritional health has been elevated more than I could have ever imagined. Seldom am I ever searching for the right words to express my gratitude, yet this experience has done just that. Recognizing the value that has been perched on the shelves of my pantry these past several months has been profound. Accolades to nutrition made simple!
Mango Coconut Chicken Tacos
2 c diced chicken
1 c Mix of onion, red and green peppers (fresh or frozen)
2 tsp Activz mango powder
1 tsp Activz coconut water powder
1 tsp garlic powder
1 tsp fajita seasoning
½ c coconut milk
½ c fresh-diced mango
1 package of soft or hard taco shells
In a skillet, cook chicken until done, and then add onion and pepper mix. Allow mix to soften, and turn heat to simmer. In a separate bowl, mix the Activz powders, seasoning and coconut milk. Pour this wet mixture over the chicken mixture. Add fresh mango and simmer until milk has evaporated.
You can serve with or without coconut rice. Layer the rice, if desired, and finished chicken mixture into your favorite kind of taco shell. Top with cheese, cilantro, sour cream, salsa and more as desired.
I was serving this to my boys, and they won’t allow me to add the pepper mixture; but when I am serving this for others or myself, I always add the pepper mixture.
