Okay, I know I just took over this blog, but I had a busy week. Plus, I need to go grocery shopping. I’m sure you all know the feeling. So instead of making my weekly grocery trip and then slaving away in the kitchen over some time-consuming recipe, I looked at what I had on hand. Lo and behold, I had what I needed to make a simple and delicious dinner with minimal effort!
Here’s my cooking confession: When I don’t want to make anything, I make pasta and use canned sauce. But then I feel bad about taking the easy way out, so I try to make it tastier somehow. That’s how I started baking my pasta. Melted cheese is one of my three favorite flavors, so by the time this dish is out of the oven, both my exhausted self and my taste buds are happy!
The good news? I could do even better than just melted cheese (and in my world, that is hard). In addition to the marinara I had in the pantry, I had half a bottle of alfredo sauce waiting in the fridge since the last time I was lazy. When you mix the two, you get a lovely pink sauce. It is better than either on its own. And since I have Activz powders, I can even boost the nutrition with the power of fresh produce that can be stirred right into the sauce!
Every last-minute recipe needs a secret ingredient. That’s where the second food in my trifecta of culinary weaknesses came in. I absolutely love sun-dried tomatoes. I have a beef with a certain store because they quit carrying sun-dried tomatoes and switched to oven-dried ones. The flavor is not comparable at all. So I go elsewhere for my little jars of delicious tomatoes and add them to pretty much anything. I promise you’ll see them again. Your secret ingredient doesn’t have to be the same as mine, though. Got something in mind yet?
Oh, and that third food love of mine? Chocolate truffles. But those are for dessert.
Makes 4-6 servings
1 lb of your favorite short pasta
½ can marinara sauce
½ can Alfredo sauce
½ T Activz Beet Powder
½ T Activz Carrot Powder
Sun-dried tomatoes or another secret ingredient
Preheat the oven to 350 degrees.
Start the water boiling. Cook pasta according to package directions.
In a bowl, combine marinara sauce, Alfredo sauce, Activz Beet Powder and Activz Carrot Powder. Stir well.
When the pasta is done cooking, drain it and put it back in the pot. Stir in sauce and your secret ingredient. While I use sun-dried tomatoes, other ideas include a left-over chicken, a can of diced tomatoes, seasoning or whatever it is that you crave in your food.
Pour pasta mixture into a 9×13 pan. Cover generously with mozzarella. Place in oven for 10-15 minutes until cheese is melted.
