This easy and healthy recipe makes a satisfying weekday dinner your whole family will love!
2 T olive oil
1 T butter
1 small onion
2 medium yukon gold potatoes
1 green bell pepper
1 red bell pepper
3 eggs
3 egg whites
1 tsp Activz Mixed Veggie Powder
salt and pepper to taste
On medium heat add olive oil and butter to frying pan. Chop up onion and potatoes and add them to the frying pan. Cook until potatoes are soft and have desired sear, about 10-15 minutes. Add chopped green and red bell peppers and let it cook for another 3-5 minutes on medium heat. Then add all eggs directly into the pan and start stirring until eggs are cooked thoroughly, which usually takes another 2-3 minutes. Finally, add the Activz Mixed Veggie Powder and stir until well blended. Include a bit of salt and pepper with each addition of ingredient.
