Sometimes, simplicity can be a mother’s greatest relief and ally in the extraordinary of the daily ordinary! The winds of change, or more accurately, the boys have requested more chicken for dinner. The reality is, if they are expressing an actual thought versus a teenage grievance, I am more then elated to accommodate! The magic trick is enshrouding all that chicken with some more nutrition. The glorified breadcrumb is the subtle method for cloaking the kick of kale in poultry perfection.
This simple breaded Parmesan chicken had them loading up their plates with crunch, kale and protein power!
1 c Italian bread crumbs
4 T Activz kale powder
1/3 c grated parmesan cheese
Salt and pepper to taste
4 chicken breasts
Mix breadcrumbs, kale powder, parmesan, salt and pepper well. Take the solid end of a meat mallet and pound the chicken breast to ½ inch thickness. Dip in egg wash and then in your breadcrumb mixture. Brown the chicken in olive oil for about 6 minutes on each side or until golden brown. Serve with a family-favorite side dish.
