As we get older, our palates become more refined. We dare to try foods we thought we hated and find ourselves pleasantly surprised to have new favorites. Some of the foods I now love are avocados, sour cream and curry. It turns out that many of the foods I thought I didn’t like were just the ones my mom disliked, explaining their absence from my life.
But while it’s fun to try new flavors, we sometimes long for the comfort foods of childhood. We want chicken noodle soup when we’re sick. We grab a popsicle for ourselves when getting them for the kids. I think we all know the thrill of having adult money and being able to buy our favorite candy bars without breaking the bank.
Macaroni and cheese is a classic example of kid cuisine, but the recipe I share below is altered to be grown-up friendly, offering very distinct flavors working in harmony. The Gruyère cheese, bacon and caramelized sweet onion particularly shine when together. While the cheeses used are white, the addition of Activz Carrot Powder creates that familiar yellow-orange color and adds a little sweetness (not to mention extra nutrition).
Even though this classic dish is modified with your palate in mind, your kids won’t question this delicious macaroni and cheese with bacon. Watch them gobble it up, even with added nutrition from real organic carrots! It’s a favorite everyone in the family can enjoy.
½ pound bacon
8 oz elbow macaroni
1 large sweet onion, halved and thinly sliced
1 cup cream
1 T Activz Carrot Powder
2 cups shredded mozzarella cheese, divided
4 oz shredded Gruyère cheese
Preheat oven to 350 F.
Cook bacon according to preference. Crumble. Reserve bacon grease.
Boil macaroni according to package directions.
Cook sweet onion in reserved bacon drippings on medium-high heat until tender and golden.
Stir Activz Carrot Powder into cream. It might be a little clumpy at first, but if you let it stand while preparing the other ingredients, it will dissolve with a second stir before assembly.
Mix all ingredients together in pot, reserving ½ cup mozzarella. Pour into a 7”x11” pan.
Bake for 20 minutes. Remove from oven and sprinkle remaining cheese on top. Return to oven for 10 minutes. Let sit 10 minutes before serving.
