I am subject to the same chronic, ordinary rut that every other mom out there faces when it comes time to figure out what is for dinner. I will flip to one of the various cooking channels for possible inspiration and enlightenment, but it typically only distracts me from folding laundry or tackling toilets that are awaiting my attention. I can saunter down the aisle at the grocery store only to shamefully return with yet another rotisserie chicken. So when I come across anything that appeals to my absence of skill and complicated effort, I am beyond captivated!
This super simple recipe can be dished up with minimal effort and in hardly any time! It had applause from even my most finicky eaters with not a morsel of leftovers to expire somewhere in the back of my refrigerator.
Melt 3 tablespoons of butter in 12-inch skillet until sizzling; add chicken and garlic. Cook over medium-high heat, turning once. Give each side 4-5 minutes or until chicken is browned. (Reduce heat, if necessary, to prevent garlic from burning.) Add wine and mushrooms. Continue cooking 4-6 minutes or until chicken is no longer pink and sauce is slightly thickened. Using a blender bottle, mix together the cream and the two Activz powders, then pour this mixture over the chicken. Let the chicken simmer in this sauce 2 more minutes, then serve.
