Every once in a while you find a recipe that’s perfect for you. You love every ingredient and would be happy if even half of them were used! Well, I found one. I love mangos, avocados, limes and black beans. Interestingly enough, they are all ingredients that were never at my childhood dinner table, but that’s the great thing about being an adult. You get to choose your food.
Taste bud triumph
This recipe is for a vegan salad. This is the type of dish where you can savor each ingredient. The avocado makes it creamy, the mango gives a tropical flavor and the beans provide a solid base for everything else. The dressing is made with lime and Activz Mango Powder, providing a sweet and acidic contrast that enhances the dish as a whole. It is definitely worth trying.

Serves 2-3 as a meal and 4-6 as a side
1 jalapeño (optional)
1 (15-oz) can black beans, drained and rinsed
3 T olive oil
2 tsp Activz Mango Powder
3 T chopped cilantro
½ tsp salt
¼ tsp black pepper
Dice the avocados, mangos and jalapeño. Chop the cilantro.
In a large bowl, toss the avocado with the juice of one lime. Add mango, jalapeño and beans and gently toss until combined.
In a separate bowl, whisk together the olive oil, the juice and zest from one lime, Activz Mango Powder, chopped cilantro, salt and pepper. Make sure to blend thoroughly.
Add the dressing to the mango-bean mixture. Toss until coated and serve immediately.
